Christmas season is back, and though we’re looking forward to friends, family and a break from work, not all the food is vegan-friendly.  Fortunately with a little work and testing we came up with our vegan Christmas pudding recipe, so everyone can enjoy this traditional Christmas fare.

To make our Christmas pudding work for our diet we had to dispense with animal-based products that are part of the traditional recipe. This includes suet, eggs, and dairy, as well as regular sugar which can often be processed with ground animal bones.  (You can get real vegan sugar here).

I don’t think there is a better dessert in the world than my favorite vegan sticky toffee pudding.  This easy recipe gives you six huge servings, and only takes about an hour to bake!

While this vegan sticky toffee pudding recipe shows you how to make your own toffee sauce, there are some pre-made vegan toffee sauces out there, but, fresher is better!

This vegan dessert goes really well with a small scoop of vegan ice cream (almond works well with this recipe).

Perfect Vegan Chocolate Cupcakes

These cupcakes are awesome and so easy to make! You can also turn them into any type of cupcake by adding whatever icing you want, and after that, top them with all kinds of really great stuff like cookies, sprinkles, or whatever you like!

*note*

This recipe can double as a cake recipe. All you have to do is pour the entire batter mixture into a large glass casserole dish and bake it the same amount of time, give or take 5 minutes.

This goes *really* well with the chocolate cupcake recipe from this site!  First, I might warn you that I don’t typically use measurements, so you will have to do lots of tasting when you try this out for the first time, but it tastes really good, so I’m sure you won’t mind.  :p

RAW Key Lime Pie

Ok, I know what you’re thinking…avocados = key lime pie????  Yes, its true, it can be done.   But you have to get GOOD avocados.  If they are brown and mushy, this recipe will not work.  You will also need a food processor for this – but if you’re into making raw foods, you have one anyway.  This dessert is SO easy to make and I recommend using single-serving pie tins and wrapping them with plastic after you make them rather than making one big pie (unless you’re making it for a group of people to eat at once), that way you aren’t exposing the pie to air every time you take a piece…because we all know that avocados turn brown after a few days.  But something tells me this won’t last a few days once you realize how good it is.

If you’re new to the concept of raw foods, check the home page for links to really great raw sites and I’ve even got some info posted on there as well!  You can always email me for answers to questions, too!  This is the best recipe for someone who trying to cut sweets but can’t seem to do it.  There is no bad fat in this recipe, so you don’t have to feel guilty about eating it!  Avocado and coconut oil are GREAT for you and this will leave you feeling satisfied and guilt-free!

This traditional Mexican dessert is perfect after any meal, but I must say it is the perfect finishing touch to a big plate of portobella fajitas with vegan beans and rice!  Either way you want to do it, just know that preparing the sopapillas will be the easiest part of your meal prep!

**Note – you can save half of your dough if you don’t want to make them all at once, it will hold in the fridge for a few days!

Every year of my life, my mother or grandmother has made a red velvet cake for my birthday…however, the past few years since I’ve been vegan, its been the only thing missing from a wonderful birthday celebration.

Here’s a twist on an old classic.  The other day I was thinking about how I wanted chocolate chip cookies…but I also wanted peanut butter cookies.  Rather than make both (which was tempting)…I combined the two and voila!  These cookies speak for themselves.  They are truly THE bomb.

I’m getting married soon, and my mother is making the cake.  Nobody in my family is vegan, but I say – why not have a vegan wedding cake?  This vanilla cake recipe is the  perfect vegan wedding cake recipe no matter which size or shape you decide to have.  Just make the cakes a day or two in advance, refrigerate them, and there you go!  I have a great recipe for vegan frosting on this site as well, but I’ll put a basic vegan butter cream frosting up for those of you who like to keep it traditional.
