Tropical Fruit Salad

This is a great salad on its own or served with a delicious savory dish.  Easy to make and everybody loves it!  Best when the fruits are in season.  Don’t freak out when you see black pepper on the ingredients list – black pepper simply brings out the flavors in fresh fruit!  This makes a nice-sized fruit salad, but feel free to half the recipe if its just for you and 1 other person.

Vegan Dutch Apple Beignets

In The Netherlands, the Dutch celebrate St. Nichols Day, which is their equivalent of Christmas.  There are many awesome Dutch recipes out there, but unfortunately most of them involve some kind of meat or dairy.  However, these tasty little apple fritters are totally vegan and every bite is delicious.

Make sure to eat immediately after cooking.  They don’t make very nice left overs!

Warm Vegan Apple & Pecan Muffins

Vegan Peppermint Fudge

Decorating cookies is one of my favorite holiday pastimes.  There is something really nice about sitting around a table loaded with different colored frostings and sprinkles…just begging to become edible decorations for gingerbread cookies!  Here is a great recipe for making the perfect gingerbread cookies.  Perfect for any holiday occasion!  Makes about 3-4 dozen, depending on the size of your cookie cutters.

One of my faaaaavorite desserts in the world is vegan pecan pie!  This one is especially nice because its got some booze and chocolate poured into it (but that’s optional for you non-drinkers out there)!  Serve it up warm with a big scoop of vegan vanilla ice cream.  It won’t last long!

Strawberry Smash Frosting

This is one of my favorite vegan dessert frostings not only because its so easy to make, but also because it tastes so fresh and the flavor of the strawberries really pops.  I love to use it for cupcakes and sugar cookies, but this frosting works well for a vegan cake as a drizzle topping, too!

These muffins are a beautiful addition to a Valentine’s Day breakfast-in-bed.  In fact, they are perfect addition to anything.  Delicious, chocolate-y, and just the right amount of sweetness from the strawberry.  You won’t want to eat just one! These take about 20 minutes to bake, and while that’s happening you can make some Strawberry Smash Frosting to double up on the deliciousness!

I’ve noticed lately that most vegan muffin recipes are packed with vegetable oil, which sort of grosses me out.  So I’ve been experimenting with replacing oil with apple sauce.  These muffins are delicious and very moist without the guilt!  Happy Cooking!
