Vegan French Toast

I created my own version of this recipe when I worked at a vegan cafe in Austin.  It started as a vegan monte cristo sandwich, but I soon figured out that the batter I was using for the sandwich was great for French toast, so there you have it!  I hope you enjoy it as much as I have on so many hungover mornings!

Red Onion Marmalade

Until I came to the UK, I had never heard of such a thing as red onion marmalade.  And honestly, when I was offered it as a topping for my vegan sausage sandwich, I asked for it on the side because I was afraid it might taste a bit…uh…like crap.   However, I’m thankful I tried it because HOLY MARMALADE, its delicious!  Here’s our recipe for the tasty condiment, best of all, it’s vegan!  Use it how you like!

Vegan Corn Muffins

These sunny corn vegan muffins are a great way to start the day with some breakfast or enjoy one of these tasty treats with a bowl of soup or some vegan chili.  They are a little on the sweeter side, but either way you want to enjoy them, they sure are nice!

Vegan Roasted Garlic and Leek Mashed Potatoes

Here’s a Thanksgiving side dish that will leave all your guests coming back for more.  Go ahead and tell them its vegan, too.  I bet they won’t believe you.

I apologize in advance for my lack of measurements in this recipe.  This is something I have always done without exact measurements, as I feel that mashed potatoes is something you want to play around with until you have it juuuust right.  Please direct any questions or comments my way.  Enjoy!

Tropical Fruit Salad

This is a great salad on its own or served with a delicious savory dish.  Easy to make and everybody loves it!  Best when the fruits are in season.  Don’t freak out when you see black pepper on the ingredients list – black pepper simply brings out the flavors in fresh fruit!  This makes a nice-sized fruit salad, but feel free to half the recipe if its just for you and 1 other person.

I live in England several months out of the year and for a country that isn’t exactly known for their brilliant cuisine, there are a few things they definitely deserve awards for.  For starters, Yorkshire puddings, sausage and mash, and Sunday roast, just to name a few.  All of which, I have found vegan recipes for.   With that being said, the sidekick to all of these delicious dishes is the Red Onion Gravy.  And here you have it…a truly vegan recipe that is just as easy to make as it is tasty.
