As winter gets closer I start thinking about warmer, filling foods.  Our vegan peanut squash stew is our answer to the winter blues.

When I first made this stew I knew it was going to be a winner, filling, warming, and easy to make, it’s a festive recipe that’s perfect whenever it starts to get cold.

 

Mexican-style Roasted Garlic Soup

Traditionally, roasted garlic soup with croutons is a Spanish dish, but by adding the fresh avocado and tomato, we are throwing a little Mexican influence in there to mix it up a bit.  This is one of my favorite soups to have when its cold out.  Super easy to make, too!

This recipe is great as a main course, but can also be used as an appetizer to a Spanish or Mexican meal.  Your choice!

Vegan Tom Kha Soup (Thai Coconut with Tofu and Mushrooms)

I love Tom Kha soup and try to order it so often, but so many times, I get shot down because its made with chicken or shrimp!  Whats up with this?  Well, here’s a recipe that is totally vegan and just as yummy…to suit everyone else who isn’t into the whole dead animal thing.  Plus, its super easy, so all you folks out there that don’t really like to cook – this one is for you.  Dazzle your neighbors.  Enjoy.

Vegan Vermicelli Soup

This is a popular Mexican soup, great as an appetizer or as a main course.  The base of the soup can be made and frozen for later use and you can add the noodles when you get ready to serve it – but its best fresh!  Make sure when you buy the vermicelli that you double check to be sure its vegan, not made with egg!  Some types of vermicelli are sneaky like that, but you can always substitute a pasta that is similar in shape and size that is vegan!

In Central and South America, Peanut soup is a well-appreciated dish, full of flavor and originality, especially popular in Bolivia and Ecuador.  The ground nuts are used as a thickening agent in this soup, which has been altered to be totally vegan!  This recipe serves 6, so be sure to invite your friends over on a cold day for a bowl!

Hearty Vegan Cabbage and Potato Soup

Here’s a little something to warm the mind, body, and soul.  I can remember as a child when my grandparents, who lived in Germany for many years, would make cabbage soup in the winter and it was absolutely delicious.   I’ve been looking for a good vegan recipe for this winter classic, and I think I’ve found one that works wonders.  Top with a little vegan cream and vegan parmesean if you want to add a little extra umph to the recipe.  Deeeeelish!

Vegan French Onion Soup

Usually, French Onion Soup is made with a load of butter and beef stock, but that doesn’t mean that vegans don’t get to enjoy this timeless classic!  Here’s an easy vegan french onion soup recipe to keep you warm on those rainy days.

French onion soup is one of my favorites by the way, it always warms me up and cheers me up when the grey skies roll in!

 

Note:  I have a great way of making the perfect crouton for this type of soup.  If you take a slice of vegan sandwich bread and cut a big circle out of the center with a ring cutter and bake it until toasty and crouton-like, it will sit perfectly on top of the soup.  You can even top it with some vegan cheese and watch it soak up all the soupy goodness!
