Vegan Fiery Carrot Dip

In the summer time, its so damn hot that I never have the appetite for a big, filling meal.  However, there is nothing better to fill up on than some cool dips and spreads to be eaten with pita, baguette slices, and cucumbers.  Here’s a really delish carrot dip that I’m sure you will all enjoy!

*note* I like to garnish this vegan recipe with some chopped cilantro and toasted pine nuts, but its entirely up to you.  Some recommend olives, too, but I like to mix it up a bit.

Here’s a new twist on a totally non-vegan dip.  I think its time we vegans get to enjoy all the tasty dips and spreads that are usually packed with garbage we don’t want to eat.  You can start with this one, because its DEEEElicious.  Not to mention, easy to make.

Blueberry muffins are one of life’s little pleasures.  And if you make big muffins, they are big pleasures.  Either way, when I found out that I have the dreaded wheat/gluten allergy, I was sad to think about a life with no muffins.  Alas, here is a recipe that pretty much solves the problem.  These suckers are pretty damn good and I can safely say that the recipe is easy as can be!
