Christmas season is back, and though we’re looking forward to friends, family and a break from work, not all the food is vegan-friendly.  Fortunately with a little work and testing we came up with our vegan Christmas pudding recipe, so everyone can enjoy this traditional Christmas fare.

To make our Christmas pudding work for our diet we had to dispense with animal-based products that are part of the traditional recipe. This includes suet, eggs, and dairy, as well as regular sugar which can often be processed with ground animal bones.  (You can get real vegan sugar here).

As winter gets closer I start thinking about warmer, filling foods.  Our vegan peanut squash stew is our answer to the winter blues.

When I first made this stew I knew it was going to be a winner, filling, warming, and easy to make, it’s a festive recipe that’s perfect whenever it starts to get cold.

I don’t think there is a better dessert in the world than my favorite vegan sticky toffee pudding.  This easy recipe gives you six huge servings, and only takes about an hour to bake!

While this vegan sticky toffee pudding recipe shows you how to make your own toffee sauce, there are some pre-made vegan toffee sauces out there, but, fresher is better!

This vegan dessert goes really well with a small scoop of vegan ice cream (almond works well with this recipe).

Vegan Yorkshire Pudding

When I moved to England, everybody kept going on and on about Yorkshire Pudding and how fantastic it is.  When I finally was able to see what one looked like, I was sad to know that I couldn’t taste it, because its made with all sorts of non-vegan stuff.  So I felt challenged to try making a vegan version of this weird savory thing…and I tell you, I can’t stop eating them!

So here we have our tasty vegan yorkshire pudding recipes!

You can use a four-cup Yorkshire Pudding tray or a 12-cup Pudding (or tart) tray, just make sure you get one that is non-stick so you don’t have to deal with that mess.  It wouldn’t hurt to lightly spray it with some vegan baking spray as well.

Hearty Vegan Cabbage and Potato Soup

Here’s a little something to warm the mind, body, and soul.  I can remember as a child when my grandparents, who lived in Germany for many years, would make cabbage soup in the winter and it was absolutely delicious.   I’ve been looking for a good vegan recipe for this winter classic, and I think I’ve found one that works wonders.  Top with a little vegan cream and vegan parmesean if you want to add a little extra umph to the recipe.  Deeeeelish!

Vegan Eggplant Timbales with “Cheese”

I rarely cook with eggplant.  I’ll admit, I think its pretty bland and I almost never have a use for it, unless I’m making ratatouille.  However, here is a recipe that showcases eggplant, and, the best part is, you can make it ahead of time and all it needs is a little pop in and out of the oven right before it gets served.   So, go buy yourself one of those weird veggies that Mrs. Conehead doesn’t like and prove her WRONG.

For the salad:  I like to serve these timbales over a spinach salad, lightly dressed with a vinaigrette and lightly toasted pine nuts, but you can use your imagination and do what you like!

Vegan Roasted Veggie Casserole

I miss the days of casseroles.  In my family, we used to eat them almost every night.  Nowadays it seems I only get to eat casserole if someone dies.  Just kidding – we all know that nobody makes vegan funeral casseroles vegan.
