I love mashed potatoes.  I love Indian food.  Why not combine the two and get something really awesome?  I think you’re going to like this!

This is a simple vegan recipe that creates a delicious side, and goes perfectly with any Indian cuisine you decide to cook up!

**Note:  This is a great recipe for you vegans out there that have partners who are not vegan.  When I make this at home, I usually make some type of Indian meat dish that my boyfriend can have with these potatoes.  Then I make myself something vegan that goes with the Indian theme…that way we’re both happy.

Here’s a healthy, dairy-free alternative to the usual Naan, which I have to admit, is sooo delicious.  It really bugs me that it tastes so great and isn’t vegan, but now – here we have it!  This recipe is pretty easy, and once you get it down, you can put your own stamp on it to make it really special by adding spices, garlic, or whatever you like!

Indian Beans on Toast

When I first moved to Britain, I was introduced to what I think is probably the weirdest breakfast food on earth:  Beans on Toast.  With all of the Indian culture here in the UK, I thought, why not put a twist on a classic and make Indian Beans on Toast?  Well, here you go – and its surprisingly good for meals other than just breakfast.

Vegan Samosa Mashed Potatoes

This recipe actually came into effect during a vegan brunch that I hosted for some friends.  I had intended on making samosas, but as time drew near, I realized I had the filling done, but no time to make the dough and fry the samosas before it was time to serve the rest of the food.  So, with a little doctoring, I turned this tasty Indian pastry filling into some awesomely delicious mashed taters that were a BIG hit.
