Easy Vegan Banana Bread

This Vegan banana bread is a tasty treat as breakfast, dessert or a snack! best of all, it doesn’t take long to make!

If you have any left over bananas that are starting to turn, you can easily use them in this vegan recipe, it makes it sweeter!


Ingredients

  • 1/2 Cup
    Brown sugar
  • 1/2 Cup
    White sugar
  • 1/2 Cup
    Margarine (Room temperature)
  • 3
    Very ripe bananas (Mashed)
  • 2 Cups
    Flour
  • 1/2 Teaspoon
    Baking soda
  • 1/4 Cup
    Vanilla soy milk, mixed with 1 teaspoon apple cider vinegar
  • 1 Teaspoon
    Vanilla
  • 1 Teaspoon
    Cinnamon
  • 1/4 Teaspoon
    Allspice
  • 1/2 Teaspoon
    Salt
  • 1 1/2 Cup
    Walnut pieces (optional)
  • Melted dark (vegan) chocolate for drizzling over the top (optional)

Instructions

  1. For this easy vegan recipe, you will need one of those nifty 8x4 inch bread loaf pans...might wanna make sure you have that beforehand...and make sure the inside is greased or sprayed with some kind of baking spray.

  2. Heat your oven to 350 F or 180 C, then sift together your flour, baking soda, salt, and spices.

  3. Cream together sugars and vegan butter/margarine. Add bananas, soy milk, and vanilla. Add the nuts if you chose to do so.

  4. Combine the wet ingredients with the dry and mix evenly. Pour the batter into a pan and bake for an hour, give or take about 10 minutes. After the loaf has cooled, drizzle some melted vegan chocolate over the top or dust with some extra sugar and pop it back in the over so that it caramelizes. This makes an excellent breakfast item, or great as dessert, too! Good luck!
