After moving to the UK, I got fed up with all those cold rainy days and decided it was time for a big bowl of vegan cream of broccoli soup and a grilled “cheese” sandwich to warm the body and soul.
So here it is – the easiest soup recipe in the world. Quick, easy, and deeeelicious.
In a large stock pot or sauce pan, combine the stock, potato, and broccoli and bring to a boil with the lid on. Continue boiling until the potato and broccoli pieces fall apart when stabbed by a fork.
Once all your veggies are cooked thoroughly, puree the soup with a hand blender (or a blender, but a hand blender is so much better). Add the cream bit by bit and taste, adding salt and pepper to taste.
After all that jazz, you're ready to eat some soup!
