Falafel-mix Cornmeal Fritters

This simple recipe for cornmeal fritters makes a delicious vegan snack or accompaniment to a meal. They are great with hot sauce, and can be dipped in to nearly anything!

A few notes!

* Don’t add the zucchini until after the 30 minutes

** Don’t add any salt or seasoning until you are familiar with your falafel mix (mine is quite salty)

*** The fritters are delicate and need care to flip especially if you are using little to no oil in your frying pan.

 

 


Ingredients

  • 1 Cup
    Cornmeal
  • 1 Tablespoon
    Sugar or Agave
  • 2 Teaspoons
    Baking powder
  • 1 Cup
    Dry falafel mix (The less ingredients the better)
  • 1 Cup
    Rice milk
  • 2
    Eggs worth of egg replacer
  • 2 Tablespoons
    Tahini or Oil
  • Zuchini grated
  • 1/2 Cup
    Raw unsalted sunflower seeds

Instructions

  1. Add falafel mix into a large measuring cup. Add milk to the falafel mix until you reach the 2 cup mark. Add tahini. Let stand for 30 minutes and then add the zucchini, egg substitute and seeds.

  2. In separate bowl, combine cornmeal sugar and baking powder and mix well.

  3. Add the wet ingredients to the dry and mix. Cook the fritters/burgers like pancakes (1/4 cup batter each) on medium/low setting in lightly oiled frying pan for 8 minutes on the first side and then 5 minutes on the second side.
