Indian Beans on Toast

When I first moved to Britain, I was introduced to what I think is probably the weirdest breakfast food on earth:  Beans on Toast.  With all of the Indian culture here in the UK, I thought, why not put a twist on a classic and make Indian Beans on Toast?  Well, here you go – and its surprisingly good for meals other than just breakfast.

Ingredients

  • 2 Tablespoons
    Veggie oil
  • 2
    Medium Onions Cut into Thin Wedges
  • 1 Teaspoon
    Tumeric
  • 1 Teaspoon
    Ground Cumin
  • 4
    Medium tomatoes (chopped)
  • 1
    Can of Green Lentils
  • Cilantro leaves
  • Vegan plain yogurt or vegan sour cream

Instructions

  1. First, heat the oil in a frying pan. Add the onions and cook until really golden and soft, then add the spices and stir. Add the tomatoes and briefly cook so that they are heated through but do not lose their shape. Add the lentils and while that is heating, toast your naan bread and put on a plate.

  2. When the beans are thoroughly heated and ready for serving, season with salt and put a big spoonfull on the naan bread and top with a dollop of vegan yogurt or sour cream and a few cilantro leaves. A squeeze of fresh lime goes nicely with this, too!
