Red Onion Marmalade

Until I came to the UK, I had never heard of such a thing as red onion marmalade.  And honestly, when I was offered it as a topping for my vegan sausage sandwich, I asked for it on the side because I was afraid it might taste a bit…uh…like crap.   However, I’m thankful I tried it because HOLY MARMALADE, its delicious!  Here’s our recipe for the tasty condiment, best of all, it’s vegan!  Use it how you like!


Ingredients

  • 2 Tablespoons
    Olive oil
  • 4
    Red Onions (Very thinly sliced)
  • 1
    Bay leaf
  • 1 Teaspoon
    Dried thyme leaves
  • 1/4 Cup
    Brown sugar
  • 3 Tablespoons
    Balsamic vinegar
  • 1/3 Cup
    Red wine
  • 1/3 Cup
    Red wine vinegar
  • 1
    Orange zest and juice
  • Salt and pepper

Instructions

  1. Heat the oil in a large pan and add the onions, bay leaf, and thyme. Season with the salt and pepper and then cover with the lid and cook over a low heat for 30 minutes. Stir occasionally and the onions are done when they are soft and translucent.

  2. Add the sugar, vinegar, red wine, zest, and orange juice. Cook for another 1.5 hours uncovered stirring quite often during the last half hour. Cook until there is no liquid left and the onions are dark with a rich red color.

  3. Allow the mixture to cool and then transfer to a jar, as it will keep for several weeks in the refrigerator (if it sticks around for that long!).
