Roasted Shallot Hummus

This easy vegan recipe adds a great twist to a well loved favorite!  The yummy taste of the roasted shallots really gives this classic recipe a kick in the balls – in a good way.  Plus, it can be made in 15 minutes!

This is perfect when you are looking for a vegan taste of the Mediterranean at home, or at a party.   Serve with Vegan Rustic Herb Crackers or fresh pita bread from a local bakery (make sure its vegan)!


Ingredients

  • 1 Cup
    Shallots roughly chopped
  • 1-2 Tablespoon
    Olive oil
  • Salt
  • 2 Cups
    Canned chickpeas
  • 4 Tablespoons
    Fresh lemon juice
  • 2
    Clove Garlic (Chopped)
  • Freshly Ground Black Pepper
  • 3-5 Tablespoons
    Water
  • 1/2 Cup
    Tahini

Instructions

  1. First, preheat the oven to 400 degrees and get ready to roast your shallots. Place them out evenly on a baking sheet and drizzle with olive oil lightly. Bake for about half an hour, or until they begin to turn golden brown.

  2. Once the shallots are done, set aside to cool and begin to mix your other hummus ingredients. I use a hand blender for this, but a food processor works great, too. Combine the chickpeas, tahini, 3 1/2 Tablespoons lemon juice, garlic, olive oil salt, pepper, and water (starting with 2-3 Tablespoons). Mix until smooth and creamy, scraping the sides of the bowl several times during the mixing process.

  3. Add the shallots and mix again. Add extra water if needed, along with the last of the lemon juice to taste. Serve with Vegan Rustic Herb Crackers or fresh pita bread from a local bakery (make sure its vegan)!
