This recipe for a vegan sweet potato is simple and easy to create. It doesn’t take much effort and gives you a delicious vegan dessert! Most of our vegan recipes take you through creating the food from scratch. In this recipe however we are keeping it as quick and easy as possible, so we include an unbaked vegan pie crust in the recipe. You can also make this yourself, if you want it to take a little longer!
So lets get started 🙂
Prebake pie crust for 10 minutes with pie weights.
Roast sweet potatoes until soft. Remove skins and allow to cool.
Blend with all other ingredients until smooth.
Pour pie filling into crust and bake for 30 minutes at 350 F
Allow 20-30 minutes to cool and enjoy!
