This is a traditional French soup recipe, but we have (yet, again) put our special vegan twist on it, and now we can all enjoy a heartwarming bowl of this artichoke goodness. You won’t be sorry you made it!
In your soup pan, sautée the artichoke hearts and garlic with the butter until golden and tender. Then, add the stock and potato.
Once everything is cooked thoroughly, blend the soup so that its a nice, smooth puree. You can do this one of two ways; we recommend using a hand blender. That way you can just blend the soup in the pan that you've cooked in. Less dirty dishes that way. However, no stress - if you don't have a hand blender, just remove all the veggies from the soup pot and about 1/3 of the stock and blend in a blender. Then, transfer the purée back to the remaining stock and stir it all together.
Season with salt and pepper and serve with some fresh vegan French bread.
