Vegan Avocado and Grapefruit Salad

This is my favorite salad on a hot day – the flavors go SO well together and its such a nice, light thing to eat when the weather is so hot.  I hope you enjoy it as much as I do!


  • 6 Tablespoons
    Olive oil
  • 2 Tablespoons
    White wine or champagne vinegar
  • 1
    Pink grapefruit (Segmented)
  • 2
    Large ripe avocados, seeded, peeled and sliced
  • 1
    Large romaine lettuce, cut in to thin pieces.
  • Salt and black pepper


  1. The assembly is easy - just whisk together the oil and vinegar in a small bowl. Place all of the other ingredients in a large salad bowl and then toss with the dressing. Then you're ready to go! Goes great with a big glass of fresh lemonade!
