Vegan Chewy Chocolate Chip Cookies

These cookies are more brownie-like, so don’t over-bake!  They only need to be baked for about 10 minutes, and although they may not seem “done”, they are.  Just let them cool for a few minutes and then they are ready to eat!

We know you are going to love these vegan cookies, this recipe gives you a more-ish consistency that gives you a really delicious flavor to boot!


Ingredients

  • 3/4 Cups
    Canola/Veggie oil
  • 2 Cups
    Sugar
  • 2 Teaspoons
    Vanilla
  • 1
    Eggs worth of Egg Replacer
  • 1/2 Cup
    Soy milk
  • 2 Cups
    All purpose flour
  • 3/4 Cups
    Cocoa Powder
  • 1 Teaspoon
    Baking soda
  • 1/2 Teaspoon
    Salt
  • 1 Cup
    Vegan Chocolate Chips

Instructions

  1. Heat your oven to 350 F. Grind the flax seeds in a coffee grinder or blender until they form a powder. Add the soy milk and blend for another 30 seconds or so. Set aside. In a large bowl, sift together the flour, cocoa, baking soda, and salt

  2. In another bowl, cream together the oil and sugar. Add the flax/egg replacer/soy milk mixture and mix well. Add vanilla.

  3. Mix the dry ingredients in batches. When it starts to get too stiff to mix, don't be afraid to use your hands! Add the chocolate chips and mix thoroughly with your hands until a nice dough forms.

  4. Make one inch dough balls and flatten them into cookies on an ungreased cookie sheet. Bake for 10 minutes and remove from the oven. Set them on a wire rack to cool and then serve!
