Vegan French Toast

I created my own version of this recipe when I worked at a vegan cafe in Austin.  It started as a vegan monte cristo sandwich, but I soon figured out that the batter I was using for the sandwich was great for French toast, so there you have it!  I hope you enjoy it as much as I have on so many hungover mornings!


Ingredients

  • Vegan or Gluten Free Bread
  • 1
    Package of silken tofu
  • 2 Tablespoons
    Vanilla or regular soy milk
  • 1 Teaspoon
    Vanilla extract
  • 2 Teaspoons
    Ground cinnamon
  • Powdered Sugar
  • Vegan butter
  • Maple syrup or dark agave nectar

Instructions

  1. So, in a large mixing bowl, whisk together the tofu, soy milk, vanilla, and cinnamon. Melt a teaspoon of the vegan butter in a frying pan over medium heat.

  2. Then, dip one slice of the bread into the batter. Cover both sides evenly and fry each side in the pan until golden brown. You can do more than one slice at a time if you feel like you can manage, but continue this step until all of the toast is made. Also, as you make the toast, the finished pieces can be kept warm in a low oven. Immediately sprinkle with powdered sugar and serve with syrup or agave nectar. If you are gluten-free, you can use this recipe too! Just sub gf bread for regular vegan bread.

  3. If you aren't a syrup lover, try serving it with powdered sugar and fruit preserves instead! Yum!
