Vegan Gingery Apple Pie

We love pie at My Vegan Planet!  Here’s a great vegan recipe for a classic apple pie with a twist!  You can’t really get more American than apple pie.  If you can’t find a vegan pie crust, check the site for our homemade pie crust recipe – super easy if you have a food processor!  Serve this up at your next dinner party and its sure to be a big hit!


Ingredients

  • 1
    Pie Crust
  • 1/2 Cup
    Vegan Butter
  • 3/4 Cups
    All purpose or wohle wheat flour
  • 1 Tablespoon
    All Purpose or Whole Wheat Flour
  • 3/4 Cups
    Vegan Sugar
  • 2 1/2 Pounds
    Apples (Around 5) - Granny Smith is good for this!
  • 1 Tablespoon
    Fresh Ginger (grated)
  • 1/2 Teaspoon
    Ground Cinnamon
  • 1/2 Teaspoon
    Vanilla Extract
  • 1/4 Teaspoon
    Kosher salt

Instructions

  1. Heat your oven to 375 and put the rack on the lowest setting, near the bottom of the oven.

  2. Next - pull out your food processor. In the processor, pulse the butter, 3/4 cup flour, and 1/2 cup of the sugar until you have some large lumps. Then, place all of that in a bowl and throw it in the fridge until ready to use. This is going to be your pie topping.

  3. Next, toss the apples, ginger, cinnamon, vanilla, salt, the rest of the sugar and the 1 T of flour all together in a large mixing bowl.

  4. Transfer the apple mixture to the crust, sprinkle with the crumb topping, and bake until the top is golden and the apples are tender - about 50 minutes to 1 hour.

  5. Serve warm with a big scoop of vegan vanilla ice cream!
