This is a simple vegan recipe that creates a delicious side, and goes perfectly with any Indian cuisine you decide to cook up!
**Note: This is a great recipe for you vegans out there that have partners who are not vegan. When I make this at home, I usually make some type of Indian meat dish that my boyfriend can have with these potatoes. Then I make myself something vegan that goes with the Indian theme…that way we’re both happy.
Boil the potatoes in a big pot of water until they are so tender that you can mash them easily with a fork. Drain the water. Warm up the milk, cream, and butter in a small pan or a bowl in the microwave and add to the potatoes. Mash everything up with a fork or a potato masher and then hit it with a hand mixer, just to ensure you don't have any hidden lumps. Add the green chilli, garam masala, cayenne, lemon juice and stir. Add salt and pepper to taste.
