Vegan Peanut Butter & Choco Chip Cookies

Here’s a twist on an old classic.  The other day I was thinking about how I wanted chocolate chip cookies…but I also wanted peanut butter cookies.  Rather than make both (which was tempting)…I combined the two and voila!  These cookies speak for themselves.  They are truly THE bomb.


Ingredients

  • 125 Grams
    Vegan margarine (just over half a cup)
  • 1/2 Cup
    Natural peanut butter
  • 1 Cup
    Brown sugar
  • 1 Cup
    Eggs worth of egg substitute
  • 1 Teaspoon
    Vanilla extract
  • 3/4 Cups
    Unbleached self-raising flour
  • 3/4 Cups
    Unbleached plain flour
  • 1/2 Cup
    Rolled oats
  • 1 Cup
    Vegan chocolate chips

Instructions

  1. Preheat oven to 350 F and grease 2 baking trays, set aside.

  2. Using a hand mixer, blend together the vegan butter and peanut butter. Add the brown sugar, vanilla, and egg substitute. Once all is mixed together, add the dry ingredients and then pour in the chocolate chips.

  3. Drop the dough onto the baking trays one spoonfull at a time and flatten gently with a fork. Bake 12-15 minutes or until golden brown. Transfer to a wire rack to cool. Once cooled, enjoy with a big glass of soy milk!
