Vegan Pumpkin Waffles

Here’s something to warm you up on a cold winter morning.  These vegan waffles are great for a vegan brunch as well!

The directions for this vegan recipe are incredibly easy, but you will need a waffle iron.


Ingredients

  • 2 1/2 Cups
    Flour
  • 1/3 Cup
    Brown sugar
  • 2 1/2 Teaspoons
    Baking powder
  • 1/2 Teaspoon
    Baking soda
  • 1/2 Teaspoon
    Salt
  • 2 Teaspoons
    Cinnamon
  • 1 Teaspoon
    Ground Ginger
  • Pinch of Nutmeg
  • Pinch of ground clove
  • 2 Tablespoons
    Soy yogurt
  • 2 Cups
    Vanilla soy milk
  • 15 Ounces
    Pureed Pumpkin
  • 1/3 Cup
    Veggie oil
  • 2 Teaspoons
    Vanilla extract
  • Maple Syrup and Vegan Butter for topping

Instructions

  1. Sift together the dry ingredients in one bowl and set aside. In another bowl, combine the wet ingredients and mix really well until its all been brought together nicely. Pour wet into dry and mix together. Pour into waffle iron and there you go

  2. Enjoy!
