Vegan Sloppy “Janes”

This recipe was passed over by a friend of mine who is vegetarian, but this is a great vegan recipe!  Especially for chilly nights when you want something warm and filling.  And kids love it, too!


Ingredients

  • 1 Tablespoon
    Olive oil
  • 1
    Green bell pepper (chopped)
  • 1 Pound
    Firm tofu (mashed)
  • 14 Ounces
    Can of tomato sauce
  • 1 Tablespoon
    Chili powder
  • 1/2 Teaspoon
    Salt
  • 1/4 Teaspoon
    Pepper
  • 1/2 Teaspoon
    Mustard
  • 1 Tablespoon
    Maple syrup
  • 2 Tablespoons
    Vegan worcestershire sauce
  • 1/4 Cup
    Basmati rice
  • 1
    Large pickle chopped

Instructions

  1. Saute onions in oil until translucent. Add green peppers and tofu and cook for 2 min., add tomato sauce, chili powder, salt, pepper, mustard, maple syrup, Worcestershire sauce, and rice. Cover and reduce heat and simmer 15-20 until rice is cooked. Stir occasionally so it doesn't stick. Once cooked stir in pickles and server over toasted buns.
