Vegan Toad in the Hole
Here’s a vegan twist on a traditional English dish, which involves sausages in Yorkshire Pudding batter and is baked, usually served with vegetables and gravy.

Once you have put the batter into the pudding tray, set it aside and start preparing the sausage. You will need 1 package of vegan sausage of your choice. (If you're in the UK - I like the Holland and Barrett Frozen Sausages) Follow the cooking directions as it says on the package, usually you only have to shallow fry them or bake them in the oven for a while. Once you have done this, you will need to cut them according to the size of your puddings. If you are using a 12-cup tray, cut the sausages into 1 inch pieces and drop 1 piece into the middle of each pudding. If you are using a 4-cup tray, you can probaby put 1 whole sausage per tray, depending on the size of your sausages
Once you have done this, follow the baking directions as shown in the basic Yorkshire Pudding recipe and serve with some steamed veggies and vegan gravy! The little Toads in the Hole (12-cup tray) work great as vegan party snacks...if you don't eat them all before you serve them! :)
